Gene's Biscuits and Peach Preserves

My hubby made delicious biscuits today as a tribute to his late dad. His cooking is one of many many legacies Gene left on this earth for us to appreciate. What a beautiful way to remember and honor him! His peach preserves are perfect accompaniment for the biscuits. We love you!

Packed with goodness

Can't get more southern than this

Gene's Biscuits

2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
2 Tbsp shortening
1/2 cup buttermilk
1/2 tsp salt
2 Tbsp butter

Preheat oven to 375. Mix all the dry ingredients together. Add shortening and mix it with fingers and add buttermilk, mix until nicely incorporated but not over mixed. Form a nice big ball of dough. Place it on a well-floured surface and flatten it with hands till 3/4 inch thick. Make disks with a biscuit cutter. Warm the biscuit pan in oven with butter and melt it. Coat the biscuit disks in the melted butter in all sides, and place them in the pan. Bake for about 25 minutes.

Honeydew Yogurt Shake

I like to leave tiny bits of honeydew in the shake

If you had a rough night, or you had a bit too much to drink, too much fun at a cinco de Mayo party, start off the following morning right with a healthy shake. It's easy and delish. Best of all, it is good for you. A lot of times, I just want to taste something green in my drinks. Honeydew has that green fresh flavor I love. Cucumber would have made it even better, but I didn't have it in my fridge.  Mint is optional.

Honeydew Yogurt Shake

1 cup almond coconut milk
1/4 Greek  yogurt
6-7 bite size honeydew pieces
1/2 lemon
1 Tbsp agave nectar

Blend them all up!

Did you know....

Greek yogurt has lots of protein you need for breakfast. Almond coconut milk has good kind of fat that would keep you full all morning.

Mint Julep Iced Tea

No need to be at the Kentucky Derby

I did not have bourbon, so I used Jameson, but it still tasted mighty good. I mixed ceylon tea and peach tea, both of which smelled insanely good. I sweetened it with the elderberry flower syrup and agave nectar, and added some club soda to make it even more refreshing.

Mint Julep Iced Tea

2 bags of peach tea
1 bag of ceylon tea
1/2 cup Jameson whiskey
10 oz club soda
1 Tbsp  elderberry flower syrup
1 1/2 Tbsp agave nectar
1/2 lemon squeezed
Lemon slices and lime slices
A few sprigs of mint

Put lots of ice cubes in a pitcher. Steep tea in a sauce pan with warm water, about a cup, add syrup and dissolve well in the tea. Cool it down and pour it in the pitcher. Toss in sprigs of mint. Stir in whiskey and club soda. Squeeze lemon in. Add lemon and lime slices. Stir and serve.

Peach tea makes it Georgia style

Traditionally, you don't add iced tea in the mint julep, but I think the flavor and the smell of your favorite tea would make it such a refreshing summer drink. It's like good ole southern sweetened iced tea, only with a kick. Don't skimp on the mint!

Pineapple Kiwi Colada

Imagine yourself on a beach....

I am enjoying using that blender. It is small enough that it does not take the counter space, and easy to wash because it is about the size of a regular drinking glass. I can get really creative with it. This time, I mixed some ripe pineapples and a kiwi. The almond coconut milk works great in this drink.

I dig this!

Pineapple Kiwi Colada

1 cup Almond Breeze almond coconut milk
1/4 cup Greek yogurt
5-6 bite size pieces of pineapple
1 kiwi

I blended pineapples and the milk first and added a kiwi at the last minute to pulse a few times.  I was hoping that the seeds in the kiwi wouldn't be crushed completely during the blending.
