Here is a nice summer cocktail. Watermelons are so cheap and so sweet right now, I need to come up with more ways to prepare them. I love how the flavor of the cucumber enhances the flavor of the watermelon without competing with it. The cucumber and the mint are from our garden.

Watermelon And Cucumber Cocktail
1 cup watermelon chunks
1/3 cut cucumber seeded, peeled and cut in small chunks
3-4 leaves mint
1/2 ice crushed
1 oz vodka
1/2 oz Cointreau
1/2 lime juiced
Slices cucumber for garnish
Sprig of mint for garnish
Lime for garnish
Seltzer water to top off
Blend all of the ingredients except for the garnishes and seltzer water. Strain the pulp out if you prefer. Fill the glass with the juice mixture and seltzer water, garnish with a slice of cucumber, mint and lime.
