Seared Scallop Salad with Chimichurri Sauce
(Two servings)
6 pieces large bay scallop
1 Tbsp olive oil
1 Tbsp butter
1 Tbsp flour
Salt and pepper to taste
Salad mix
Mango, diced, optional
