Mac 'n Cheese and Meatloaf Stuffed Peppers

Sometimes it's not easy to cook for just the two of us, so I make too much and end up with lots of leftovers. But a great thing about leftovers is that you can get pretty creative with them. Add one more thing to them, and you can make an entirely different dish. For this recipe, I used leftover meatloaf and mac 'n cheese to stuff red bell peppers. No one would know they were made with leftovers!



Mac 'n Cheese and Meatloaf Stuffed Peppers

1 1/2 cup mac 'n cheese, instant mac 'n cheese would work fine.
2 large red bell peppers
1 cup leftover meatloaf, crumbled
1/2 tsp parsley
Parmesan cheese to sprinkle on top

Preheat oven to 350. Combine mac 'n cheese and crumbled meatloaf with parsley and mix. Cut peppers in half and stuff them with the mac 'n cheese mixture. Bake for 40 minutes covered, sprinkle cheese on top and bake for another 10 minutes uncovered.

Filled with mac and cheese and meatloaf crumbles.
After 50 minutes in oven; gooey goodness.
