Tomatoes and fresh mozzarella cheese with avocado basil dressing |
Avocado Basil Dressing
1 avocado
A bunch of basil
1 clove garlic
1/4 cup extra virgin olive oil
1/2 fresh lemon juice
1 Tbsp rice vinegar
1 tsp white wine vinegar
2 oz. water
A pinch of salt and pepper
Combine all in a blender until smooth. If it's too thick for you, add some water and blend again.
This would make a good dip, too. |
