Curry Flavored Pickles with Okra, Eggplant and Green Tomato

The time has come to just consume the vegetables from garden like maniacs. Just eat them one after another without thinking because wasting is not an option!

Tangy spicy pickles

Curry Flavored Pickles with Okra, Eggplant and Green Tomato

3 small eggplants, sliced
1/2 cup cut okra
1 green tomato, cut in 1/8 segments
1/4 cup sushi vinegar
1/2 tsp curry powder
Just a drop of soy sauce or shirodashi broth sauce

In a Ziploc bag, combine all ingredients and try to let the air out of the bag as much as you can. Chill it in the fridge for over night. Serve chilled.

Sliced eggplants 

In a Ziploc everything goes.
