Pulled roasted chicken with a special mustard sauce |
Asian Chicken Avocado Bowl
1 cup cooked rice
1/4 avocado, thinly sliced
1/4 cup roasted chicken, pulled by hand
1 tsp soy sauce
1/2 tsp Japanese hot mustard
1/4 tsp chili sesame oil
Splash of lemon
Sesame seeds for garnish
Cilantro for garnish
In a small bowl, combine soy sauce, lemon juice, chili sesame oil and mustard and mix well. Pull leftover roasted chicken into smaller bite size pieces. Mix chicken with the soy sauce mixture. In a soup or cereal bowl, lay cooked rice on the bottom and top it off with slices of avocado and chicken. Sprinkle sesame seeds and cilantro.
