Cold Korean Arrowroot Noodle Soup

Arrowroot noodles contain no gluten

I love the cold noodle soup at Korean restaurants, and I have been wanting to make it at home. The texture of this noodle cannot be found in any other noodles; smooth, chewy and almost elastic. There were a couple of brands of noodles at the store, and this one came with the powdered soup that had a bit too much MSG in it. So I improvised it by making the soup with soba noodle soup. It turned out to be an excellent alternative.



After cooking for 1 minute, it looks like this.
Kimchee, slices of cucumber and pear for toppings
I added wasabi in the soba dipping sauce
Don't forget to drizzle hot chili sesame oil on top.
