Korean Pancakes Pajeon

I make these every now and then when I don't have much in the fridge but vegetable scraps. Whatever you have on hand is good. I happened to have green onions, dried baby shrimp, and seaweed flakes. Chop them small and thin and throw them all in the savory batter. Brown both sides, and serve them with a dipping sauce. Makes a great lunch or snack.

Pajeon with shrimp and scallions


Pajeon (Also spelled Pajun)

1/2 cup flour
1/2 cup water
1 tsp miso paste
1/2 tsp sugar      
1/3 cup green onions, cut in 2-3 inches
2 Tbsp dried baby shrimp
1 Tbsp seaweed flakes

Miso paste
Batter with veges and stuff

Sauce: 
1 1/2 Tbsp soy sauce
1 Tbsp sushi vinegar
1 Tbsp water
1/4 tsp chili sesame oil
1 tsp agave nectar
1/4 tsp sesame seeds
Splash of lemon

Brown both sides

Combine all the ingredients and make the batter. On a skillet, warm 1 tsp of oil and pour the batter and brown both sides. Cut in small squares or triangles and serve with dipping sauce.
