Daikon Radish and Cucumber Salad with Yuzu Dressing

It makes me happy to see more products on the market with Yuzu flavor. Yuzu is a Japanese citrus with a very distinctive aroma. For a long time, we could get our hands on them only when we go back to Japan, but I'm seeing a few things out there I can use for my cooking now. I used avocado oil to make the dressing so the delicate Yuzu flavor would come through.

Refreshing clean flavor
Yuzu rice vinegar

Daikon Radish and Cucumber Salad with Yuzu Dressing

1 cup daikon radish, julienned
1/2 cup cucumber, julienned
3 Tbsp Yuzu rice vinegar
1/4 cup avocado oil
A pinch white pepper
1/4 tsp Japanese red chili pepper
1/2 tsp salt
1 tsp agave nectar

Julienned daikon radish
Cut daikon radish and cucumber and place them in a bowl. In a salad dressing shaker, combine Yuzu vinegar, avocado oil, agave nectar, chili pepper, salt and pepper. Shake well. Pour it over the cut vegetables and toss. Serve chilled.

Japanese chili pepper adds a nice kick.
