Green Super Soup with Coconut Milk

I had a little bit of frozen peas, kale and broccoli in the freezer. Not enough to make decent side dishes by themselves, but combining them, I can make a pretty healthful dish.

Topped with a dollop of creme freiche

Green Super Soup with Coconut Milk

1 cup frozen broccoli cuts
1/2 cup frozen kale
1/4 cup frozen sugar snap peas
Handful of parsley
1/2 tsp onion powder
1 clove garlic, smashed
1 tsp basil paste
1/4 tsp cumin
1/2 lime, juiced
1 bay leaf
Salt and pepper to taste

I use this tubed basil a lot in my cooking. It has an intense basil flavor.

Combine peas, kale, broccoli, parsley, chicken broth and coconut milk in a blender and blend until smooth. Transfer to a  sauce pan and add a bay leaf and garlic. Add cumin, onion powder, salt and pepper. Splash lime juice. Cook until fragrant.

Coconut milk and lime add a nice aroma.
