Warm Shirataki Noodle Salad

Shirataki noodles have no calories but lots of fibers. Add your favorite meat and vegetables to turn it into a delicious salad.



Warm Shirataki Noodle Salad

1 package shirataki noodle
1/2 onion, sliced
1 cup frozen kale
1 Tbsp dried baby shrimp
2 Tbsp soba noodle dipping sauce
2 Tbsp water
2 Tbsp sake
1 Tbsp sesame oil
1 tsp sugar
Sprinkles sesame seeds
Sprinkles of chili flakes
Salt and pepper to taste

In a medium sauce pan, boil water and add shirataki noodles and cook for a few minutes. Drain. Cut noodles with kitchen scissors into bite sizes. Warm sesame oil in a skillet or a sauce pan and add onion slices, chili flakes and shrimp. Cook until onions are translucent and shrimp gets fragrant. Add noodles and kale and stir. Add dipping sauce, water and sake and cook until the liquid is almost all gone, about 15 minutes. Sprinkle in some sesame seeds.

This rids the funky smell out of the noodles.

Sautéed Kale and Cabbage with Prosciutto

This side dish was a hit. In fact, my hubby ate the whole bowl full of it. You can add whatever the herb you like, but rosemary and fennel seeds are really nice in it.
Makes a side dish or a nice warm salad.

Sautéed Kale and Cabbage with Prosciutto

4 cups chopped kale
1 cup cabbage, cut in bite sizes
1/4 onion, sliced
2 Tbsp prosciutto,  diced finely
1 Tbsp sushi vinegar
2 Tbsp olive oil
Dash of nutmeg, dry rosemary and fennel seeds
Salt and pepper to taste
Splash of lemon

Heat olive oil in a skillet and brown prosciutto. Add onion and cook until translucent. Add rosemary and/or fennel seeds. Toss in cabbage and cook for a minute. Add kale and vinegar and cover with a lid. Sprinkle nutmeg, salt and pepper and toss to coat. Splash lemon before serving.

Brown them nicely.

Pair it with a nice chilled white wine. Enjoy!

Early Summer Flowers

It seems that every flower in the yard is blooming all at once. And our vegetables are doing so well. I think we might get some tomatoes in a few days. Yes, it's early.

Vegetable Garden

Hot weather and lots of rain have been helping all of our plants to thrive. They grow so much in one day. It's fun to be surprised by their growth in the morning. Here are what we have so far.

Eggplant has a flower today.
Eggplant
Three different kinds of tomatoes. All doing well.
Okra. They look like they are doing better.
Looking more and more like shiso leaves! But they are still very small.
Tiger Lilies 
I think these are petunias. Love them!
Kona likes it when I'm outside with him.
