Avocado Basil Dressing

With my personal blender, I made avocado basil dressing. Basil is growing like crazy in our garden right now, so this is just one way to consume it. 

Tomatoes and fresh mozzarella cheese with avocado basil dressing


Avocado Basil Dressing

1 avocado
A bunch of basil
1 clove garlic
1/4 cup extra virgin olive oil
1/2 fresh lemon juice
1 Tbsp rice vinegar
1 tsp white wine vinegar
2 oz. water
A pinch of salt and pepper

Combine all in a blender until smooth. If it's too thick for you, add some water and blend again.

This would make a good dip, too.
On a bed of spring salad mix

Chi Chi Chi Chia Cereal

I've been trying to get in a habit of having breakfast within two hours of waking up. I hear it's good for boosting your metabolism. For someone who doesn't like eating breakfast, it's a challenge. This chia seed mix gets gelatinous and pudding like when soaked in liquid. Add some nuts and fruits and you're ready to go. I think I can eat this in the morning.


If you like rice pudding, you'll love this.


Chi Chi Chi Chia Cereal

2-3 Tbsp Qi'a superfood seed mix
1/3-1/2 cup almond milk
Your favorite fruits and nuts, cut small

In a cereal bowl, combine Qia mix and almond milk. Soak for an hour or so until it gets gelatinous. Add fruits or nuts if you like. This mix already has some cranberry and almond slices. You can soak it over night in the fridge.

It comes in different flavors.
Rather expensive but you only need 2 Tbsp/serving.
Soaking in almond milk. Coconut milk would be good, too.
After soaking it over night. Pudding like consistency.

Kale Pineapple Smoothie

I've been thinking about an easy way to incorporate kale without buying a 400 dollar blender. Then I saw a bag of frozen kale at the store yesterday.The brittle frozen kale is perfect for my personal blender. 

It's good and good for you.


Kale Pineapple Smoothie

1 cup almond milk (coconut milk would make it even more delicious!)
1/4 cup Greek yogurt
1/2 cup frozen kale
1/2 cup pineapple chunks
2 oz. coconut water
4 pieces strawberries (or whatever you have, no rules!)
1 tsp agave nectar, optional

Combine all of the ingredients and blend until smooth. 

Personal blender. Just big enough for one person.
