Earl Grey Muffins

I made the tea flavored muffins with rice flour. I originally wanted to steam them but did not want to wash the bamboo steamer. They came out pretty good. I buried a few white chocolate morsels in them. Unfortunately the chocolate chips sank and melted at the bottom. 
Made with rice flour, no gluten

Earl Grey Muffins

1 cup rice flour
1 egg
1/2 cup earl grey made with skim milk
2 Tbsp sugar
2 Tbsp canola oil
2 tsp baking powder
1/2 tsp salt
1/4 cup white chocolate chips

Preheat oven to 425. Make earl gray tea in a 1/2 cup skim milk. I left some of the tea leaves in the milk also. It added a nice touch. Mix all of the ingredients and pour it in the muffin tin. Bake for 17 minutes. Cool for 5 minutes.
