Ban Ban Ji with Sesame and Peanut Butter Dressing

Ban ban ji is a classic Chinese chicken salad that can be eaten warm or cold. The dressing is sweet, tangy and spicy, and it goes with different kinds of salad, too. I have a bottle of this dressing in the fridge all the time.

Ban ban ji salad

Ban Ban Ji with Sesame and Peanut Butter Dressing

1 or 2 chicken breast
1 English cucumber, julienned

For dressing:
3 Tbsp creamy peanut butter, or tahini sesame paste (or half of each)
3 Tbsp sugar
3 Tbsp soy sauce
3 Tbsp vinegar
3 Tbsp cooking sake
1 Tbsp sesame oil
1 Tbsp sesame chili oil
1 tsp grated ginger
Combine all and whisk well.

Boil or microwave the chicken breasts. Cool and shred meat into smaller pieces by hand. Place cucumber and chicken on a serving plate and pour the dressing.

Arrange them on a big plate and pour the dressing on top.
