Kale Salad with Mango and Sun Dried Tomatoes

It seems that kale is the popular leafy vegetable these days. I like it, too, although, I find it to be a bit too tough. For this salad, I softened the kale by sprinkling some salt and lemon and gently smush it in my hands. Softened kale is easier to eat. 

It's good and good for you.

Kale Salad with Mango and Sun Dried Tomatoes

4 cups strips of kale
1/2 cucumber, cubed
2-3 baby red, and yellow bell peppers, cut in bite sizes
1 mango, cut in bite sizes
2 Tbsp sun dried tomatoes in olive oil, chopped
1 1/2 Tbsp olive oil
1/2 lemon, juiced
1/2 tsp salt
Dash of white pepper
Dash of cumin

Mango and sweet mini peppers

In a big bowl, put kale, lemon juice, salt and olive oil. With clean hands, gently massage the kale until it's soft. Combine all the cut vegetables, mango, white pepper and cumin and toss well. Serve chilled.
