Grilled Shrimp Salad in Basil Aioli Dressing

I had a little bit of this and that in the fridge; not enough to make anything major, but I could make some chopped salad. Make the dressing extra special and tasty so nobody would know it's a scrap veggie salad!



Grilled Shrimp Salad in Basil Aioli Dressing

1-2 cup medium shrimp
1/2 cucumber
2 mini bell peppers, sliced small
1 stalk celery, chopped
1/4 red onion, sliced thin
1/4 cup Havarti cheese, cubed
1 Tbsp fresh basil, julienned
1 tsp capers

Basil paste
Whisk well...
Basil aioli

For dressing
2 Tbsp basil paste
1 Tbsp mayonnaise
1 Tbsp Greek yogurt
1/4 tsp minced garlic
1/4 lemon, squeezed
2 dashes of Old Bay spice
Salt and pepper to taste

Grill shrimp in olive oil. Cool. Cut all the vegetables in bite sizes. Throw in grilled shrimp and the cut vegetables in a bowl. In a small bowl, combine all the ingredients for dressing and whisk well. Pour in the dressing and toss to coat. Serve chilled.
Grilled and browned shrimp 
Cut them all up in bite sizes.
