Moist Meatloaf Monday

I was a little reluctant to make a meatloaf after reading an article yesterday about how red meat is bad for you. But alas, I had already bought a package of ground beef and other beef products for the week. Besides, who can keep up with what's good and bad for you from one week to another? I can at least promise you that this meatloaf is so moist that you can rule out choking from it. Now, that's healthy!



Moist Meatloaf

1 lb. ground beef
1 small onion, diced
1 egg
6 pieces Ritz crackers
1/4 cup panko
1/2 cup milk
2 Tbsp ketchup
1 Tbsp soy sauce
1 tsp worcestershire sauce
1 tsp salt
1/2 tsp pepper
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp coriander

Make a loaf on a cookie sheet for even cooking and easier clean-up.

Preheat oven to 350. Microwave diced onions in a small bowl for 2-3 minites. Add crumbled Ritz crackers, panko and milk to the bowl and let it soak for a minute. In a medium bowl, beat an egg, add ground beef and all of the ingredients. Add the panko mixture to the bowl. Mix. On a cookie sheet lined with foil, dump the beef mixture and mold it into a loaf. Add extra ketchup on top and bake for 50 minutes or until the internal temp reaches 160 degrees.


For a side, I made buttered turmeric Jasmine rice with green peas. Make a salad, and you are set with a balanced meal.

Buttered Turmeric Jasmine Rice with Green Peas

1 cup Jasmine rice
1 1/2 cup water
1/4 cup frozen peas
1/4 tsp turmeric powder
1/3 tsp salt
1/4 tsp white pepper
2 Tbsp butter 

Cook rice according to the package instructions, adding all of the ingredients except for butter. After steaming the rice, toss in butter to melt on the rice and fluff it with a fork.
This meatloaf does not choke you.
