Taboule Salad

Spring is in full swing, and we've been having really warm days. I have the ceiling fans on, and our dog is sleeping on the cold hardwood floor. Days like this, I don't want to cook anything warm. How about taboule salad tonight?

Confetti-like taboule salad


Taboule Salad

1 package of tabouli 
1 cup diced tomato
1/2 cup diced cucumber
1/4 cup dried cherry
2 Tbsp chopped fresh mint
2 Tbsp lemon juice
1 Tbsp olive oil
Dash of cumin
Salt and pepper to taste

Tomatoes, cucumbers and dried cherries

Cook taboule according to the package instructions. Mine had already some seasonings in it. If yours doesn't come with any seasoning, add salt and pepper at this point. Cool cooked taboule in the fridge. Combine tomatoes, cucumbers, cherries, mint and mix. Add a dash of cumin, lemon juice and olive oil and toss. Chill in the fridge until ready to serve. Tastes even better the next day!
