Anniversary Dinner

We've been married for nine years today. To celebrate, I made a special dinner for us. It's a salad with seared scallops and mango with chimichurri sauce. (I'm looking for an excuse to use this sauce....) A little fresh fruit adds a nice color and flavor to the salad. A glass of sparkling wine makes the meal even more special.



Seared Scallop Salad with Chimichurri Sauce
(Two servings)

6 pieces large bay scallop
1 Tbsp olive oil
1 Tbsp butter
1 Tbsp flour
Salt and pepper to taste
Salad mix
Mango, diced, optional
Chimichurri sauce, recipe here

Chimichurri sauce

Take a paper towel and pat dry the scallops. Lightly sprinkle salt and pepper and coat both sides with flour. Melt butter in olive oil and sear the scallops until golden on both side. To assemble the salad, place the scallops and a few pieces of mango on a bed of salad mix. Drizzle chimichurri sauce on the scallops.

A little flour and butter help brown the scallops.
