Cold Soba Salad with Peanut Dressing

Soba noodles are made with buckwheat which is a good source of complex carbohydrate and is rich in essential vitamins and minerals. Because soba is also high in fiber, it keeps you full for a long time. It is a good diet food that you want to keep in your pantry.

Cold soba noodles with shredded vegetables

No preservatives, no MSG, all natural

I found this bottle of Thai peanut sauce at the local grocery store. When I saw it at the natural food isle, I wasn't sure if I would like the taste but it's very tasty to my surprise. 


Cold Soba Salad with Peanut Dressing

2 cups cooked soba noodles, rinsed in cold water
1/2 cup shredded carrots
1 stalk of celery thinly sliced
1/4 cup seaweed
1 tsp toasted sesame seeds

For dressing:
1/2 cup Annie Chun's Thai Peanut sauce
2 Tbsp sesame oil
1 tsp soy sauce

Mix the noodles with all the veges and put aside. You can use whatever the vegetables you like. Combine all three ingredients for the dressing and pour over the noodle mixture. Mix well and serve cold.
