Gene's Biscuits and Peach Preserves

My hubby made delicious biscuits today as a tribute to his late dad. His cooking is one of many many legacies Gene left on this earth for us to appreciate. What a beautiful way to remember and honor him! His peach preserves are perfect accompaniment for the biscuits. We love you!

Gene's Biscuits

2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
2 Tbsp shortening
1/2 cup buttermilk
1/2 tsp salt
2 Tbsp butter


Preheat oven to 375. Mix all the dry ingredients together. Add shortening and mix it with fingers and add buttermilk, mix until nicely incorporated but not over mixed. Form a nice big ball of dough. Place it on a well-floured surface and flatten it with hands till 3/4 inch thick. Make disks with a biscuit cutter. Warm the biscuit pan in oven with butter and melt it. Coat the biscuit disks in the melted butter in all sides, and place them in the pan. Bake for about 25 minutes.
