Peach Cobbler

Best served with ice cream

We had our friends over last night. I wanted to make something easy and delicious, but most importantly, something that says welcome to our home. You don't need to be a baker to make a delicious cobbler. Most ingredients are what you would usually keep in your kitchen anyway. If you have blueberry or blackberry, you can use them instead, or in addition to the peaches. Make enough of it, and you can eat it for breakfast the next morning, too.


Peach Cobbler

4 cups frozen peaches
1 stick butter
1 1/2 cup sugar
1 1/2 all purpose flour
2 tsp baking powder
1 1/2 cup milk
2 tsp corn starch
Pinch of salt
Cinnamon
Nutmeg

Preheat oven to 350. Cook frozen peaches with 1 cup of sugar for about 10 minutes, add corn starch, cinnamon, nutmeg and stir till slightly thickened, set aside. Place a stick of butter in a 3 qt casserole dish and melt it in the oven. In a bowl, mix flour, baking powder, rest of the sugar, salt and milk. Take out the casserole dish with melted butter and pour in the batter. Add in the peach mixture to the batter carefully so it doesn't scorch you, and put it back in the oven. Bake for 30 to 45 minutes.
