When I have just enough leftovers but not enough for a full meal, I revive them and turn them into a new dish. This is where I get creative. It is like an art project. There is something fun about constructing the dish with limited ingredients.... It's like you are being dared! There is no guarantee that it's going to turn out well, though. I had a few pieces of the fried chicken liver from the other day, so I put them on a hoagie roll with a bit of coleslaw. I happened to have some watercress, so I put that in there, too. Heck, why not? Makes a good picture, anyway. Make it spicy with hot sauce!
