If you've had the pleasure of going to Hawaii, you already know what Taro is. They use a lot of it in their cuisine since their climate is suitable for growing the vegetable. Even if you haven't, you see many products made with Taro a lot more lately. It is a root vegetable like a regular potato and is often cooked like a regular potato. But the nutritional value of Taro is much healthier than the regular white potato. It contains as three times more fiber as a potato and has a low Glycemic Index, which means that it does not shoot up the blood sugar level quickly like regular potato can. You can eat it just like a potato, with much less worry. For me, it's the beautiful purple color of Taro that makes any snack a delight.
